Newly launched New York bar Yours Sincerely Cocktail Laboratory is offering patrons pre-mixed cocktails from a tap system – traditionally used for pulling pints and more recently seen dispensing coffee (see Reinventing Coffee for more).
This format not only enables intensive preparation to be massively reduced, facilitating speedier service, but also frees up bartenders to focus more on their guests, and less on the minutiae of cocktail assembly.
Classic iterations are given a contemporary twist with quirky names and interesting ingredients. For instance, a traditional Old Fashioned (made with date-infused Bourbon) is known as Swipe Right Here, while a Daiquiri (made with lime-infused Denizen rum) is called the Lab Rat, and a Tom Collins (with added hibiscus agave syrup) is called a Ruby Slippers.
More than 24 cocktails are available in total, as well as cocktail shots and build-your-own beverages. Cocktail shots include the Chaos Theory (made with chicory, molasses and rum), while non-alcoholic offerings include Black Lemonade and Grapefruit Pop – all priced between $4-8.
A potential backlash to the craft cocktail trend (see Craft Spirits: Alcohol's New Frontier), this sort of initiative can be seen as democratising cocktail culture. Fuss and fanfare are minimised, with the 'spectacle' of the experience now provided by the tech-enhanced machinery.
