Sky.P.A: Beer From The Clouds

Reminiscent of Fog Point vodka (covered in Culinary Provocateurs), Sky.P.A. is a new pale ale that includes moisture collected from the clouds above the Scottish Highlands.

Created by Scottish craft brewer Innis & Gunn, the production technique involved building an airborne 'cloud harvester’ to collect enough water to brew 500 pints of beer. The composition of the water was influenced by its geographic origin – in this case, the Atlantic – making it high in minerals that added flavour alongside hops and malts during the brewing process.

The brewer is known for its oak maturation processes and product innovations, including the world’s first ‘beer marmalade’. It’s currently crowdfunding via Crowdcube to raise £1m ($1.2m) for further product development.

As product developers, brands and consumers become more aware of the environmental impact of food and drink, we’re seeing an increase in climate-conscious products. This ties in with the uptick in ‘Climavore’ diets, where intake is aligned with nature’s unpredictable cycle, which is influenced by climate change and agriculture.
