Roland Rittman - The Collector

In 2010, Noma, a cutting-edge restaurant in Copenhagen, was named the best restaurant in the world, bringing long-overdue attention to Nordic Cuisine. Just over the bridge in the little village of Anderslöv, southern Sweden, one of Noma’s founding suppliers, Roland Rittman, talked to Stylus about how he began gathering and selling the wild herbs and plants that are such a large part of Noma’s culinary style.
