Drambuie’s Floating Apothecary


Offering stunning views of Sydney Harbour, The Dispensary is a pop-up bar from whiskey makers Drambuie, conceived as a floating apothecary.

Australian duo Matilda Swan and Simon Connett designed the bar. They won Drambuie’s The Premise contest, which simply asked entrants to conceptualise a temporary pop-up bar that would showcase its product in a creative new way.

Inspired by Drambuie’s promotional brand spiel – which highlights the drink as an age-old medicinal elixir – the designers used antique leather furniture and recycled timber to give a dark, worn feel to the interiors, topped off with traditional apothecary details such as potted herbs, mortars and pestles, medicine bottles, glass jars and medicine cabinets.

Situated in Sydney Harbour, the floating bar is only accessible via water taxi, delivering an extra air of exclusivity.
