Meatless Butcher


De Vegetarische Slager (the vegetarian butcher) is a food store dedicated to meat substitutes.

Recently opened in The Hague and Rotterdam in the Netherlands, De Vegetarische Slager is the quirky brainchild of Jaap Korteweg, who worked with chef Marco Westmaas and politician Niko Koffeman.

As well as selling existing meat substitutes, the meatless butcher also sells Korteweg’s own innovative line of lupin-based products. Lupin beans lost popularity in the wake of the soybean, but Korteweg – an eighth-generation lupin grower – is determined to re-introduce them as a sustainable alternative to meat.
