Ikea Launches Cookbook of the Future


In response to growing concerns around the environmental impact of the global food system, Ikea's Copenhagen research lab Space10 has launched a cookbook promoting a healthier diet that's also kinder to the planet.

The book, called Future Food Today, is a compendium of sustainable recipes. Meals include bug burgers, algae chips, Swedish meatballs made from mealworms, and Dogless Hotdogs, made from a spirulina bun and a dried, glazed carrot with beet and berry ketchup.

It also includes instructions on how to grow your own mushrooms at home from coffee grounds, a step-by-step guide on building a DIY microgreens hydroponics station out of Lego bricks, and guidelines on raising freshwater fish to eat using an at-home aquaponics system.

According to the cookbook's editor Polina Bachlakova, assisting at-home cooks to produce their own food is a crucial component in the shift away from unhealthy and unsustainable diets. "It really represents that eating new sustainable foods doesn't have to be super expensive or gross or weird," she told US publication Fast Company. "[...] Cutting down on meat and growing your own algae is an empowering feeling, and unites people in this cause that's so necessary for the entire world to rally around."
