London Gastronomy Seminar: The Pursuit of Umami

The pursuit of umami – the savoury, broth-like fifth taste discovered by Japanese scientist Kikunae Ikeda – stirred debate at the London Gastronomy Seminar on flavour on March 28. Speakers trumpeted the power of perception and the resurgence of seaweed, with petri dishes of kelp chips and tubs of red seaweed ice cream.
