Azolla: Future Food


Swedish artist Erik Sjödin's project Super Meal explores the possibility of using aquatic Azolla (commonly known in Japan as a rice paddy weed) as a key ingredient in future fast food. The ‘super plant’ is cheap and easy to cultivate, grows quickly, and is packed full of nutrients.

Working with farmers, chefs and scientists, Sjödin is exploring how to produce Azolla, experimenting with a number of growing techniques and environments. An Azolla Cookbook and Cultivation Manual will be published later in the year to share what has been learnt from the project.
