Extreme Ice Cream

Tapping into consumer demand for extreme and unusual ingredient combinations, Sydney-based ice-cream parlour Aqua S has launched a new sea-salt-flavoured ice cream, topped with sweet popcorn, popping candy, 'fairy floss' and a grilled marshmallow.
Aqua S, which opened in January, offers only three flavours and specialises in soft-serve ice cream – which is stored at a warmer temperature than traditional ice cream. The sea-salt variety is a permanent fixture, while the others change on a fortnightly basis. Previous offerings have included biscotti and lemon tea.
As previously covered in The Ice-Cream Dream, ice cream is an ideal vehicle for flavour innovation, from goats' milk iterations, to savoury varieties infused with bacon and eggs.
