One of Sydney’s top ice creameries, Gelato Messina has opened an experimental ‘lab’ next door to its Darlinghurst store. The creative department (Laboratorio and Patisserie) is transforming its regular gelato flavours into super-luxe creative delights – including Arabian Knights, made with pistachio gelato, orange-scented chocolate-coated rosewater marshmallow and marsala-soaked génoise. Other highlights include an ice-cream burger with chocolate crackle gelato, white chocolate gelato and apricot gelée, compressed cucumber and white chocolate slice, and a more traditional ice cream on a stick called the Samurai – featuring yuzu sorbet and salted caramel swirl encased in orange-scented chocolate.
