Vodka Made from Bone Marrow

To celebrate the launch of new horror video game Doom Eternal, US gaming publisher Bethesda Softworks has collaborated with London alcohol producer Rebel Distillers to create a savoury vodka infused with bone marrow.
The distillers roast and smoke ethically sourced beef bones from London butcher The Ginger Pig and extract the bone marrow, which is macerated in wheat vodka. The spirit is then distilled at a low temperature in a vacuum still, lending it a rich flavour.
The resulting vodka has an earthy, umami flavour with a buttery mouthfeel and a peppery, smoky finish. For more on current flavour directions, see New Architecture of Taste.
Rebel Distilleries' founder and head distiller Matt McGivern said of the drink: "We're tapping into one of the world's favourite hobbies – video games – to offer a unique perspective in spirit production. Doom Eternal is a world of flames and demons, a barbeque pit with action – a smoked bone vodka is certainly a new take on spirit provenance."
