Held on Refshaleøen island (a 10-minute boat ride from Copenhagen, Denmark), the Mad Food Camp was the first large-scale event dedicated to the Nordic food movement. The fair presented sustainable, earthy, foraged food as the new ‘gourmet’ – a world away from the scientific, constructed perfection of molecular gastronomy and modernist cuisine.
